Many sites serve different prices, content, search results, or ads depending on where the visitor appears to be, and a local IP is the only way to see the local version. For price monitoring, ad verification, SERP checks, or localized scraping the proxy's country is critical; for pure throughput where location is irrelevant, pick whichever country is cheapest or closest to you.
